Yummy Peanut Butter and Cream Cheese Snack For Kids with Type 1 Diabetes

I do not know about you, but coming up with healthy snacks for diabetics, especially for my Type 1 Diabetic child can be a daunting one.
My daughter is one that does not like eating her veggies, so I needed to come up with a way for her to eat them, but without her knowing that she is actually eating something good for her.
So here is a simple and yummy peanut butter and cream cheese healthy snack that you can give to your child.
What Are Good Snacks For Diabetics?
When my daughter was diagnosed, the nurse and the Endocrinologist informed us that she can eat whatever her heart desired.
However, with time, although we have fairly good control of her sugar levels, we want for her to eat more fruits and veggies and to eat more low-carb.
We try for her to eat foods that produce little to no glucose, so that way we are not having extreme highs.
Good snacks will have the following ingredients:
- Chicken
- Turkey
- Fish
- Cheeses
- Egg
- Almonds
- Nuts
- Vegetables
- Salad
- Apples
- Strawberries
If your child is a picky eater, offer new foods frequently, and in small portions. Slowly, your child will get used to them, and one day he/she will surprise you and will take up on your offer!
Ingredients
- 3-4 baby carrots
- 3-4 oz. cream cheese (softened at room temperature)
- 6-8 crackers
- 1-2 stalks celery (cut in approx. 2-inch pieces (about 6 or 8))
- 2-4 tbsp of smooth peanut butter
- 2 raisins, cut into little pieces
- Pretzels
Instructions
In a food processor, chop carrots and then fold into cream cheese. Mix thoroughly.
Spread cream cheese mixture on each cracker.
Spread peanut butter into crevice of celery piece and carefully place on top of each cracker.
Place two pretzels within the celery and then add your small raisin pieces (they will act as your butterfly’s “eyes.”)
How I got my daughter to eat this snack was to eat the butterfly first and then the cracker with the cream cheese and the chopped carrots.
She LOVED the peanut butter with the raisings. We are still working on her eating the celery, but the cracker with the cream cheese was a home run!
